Peanut (Butter) Chicken Pizza

Let me preface this recipe by saying that if you, in any way, dislike peanut butter, this dish is not for you. In fact, I would go so far as to say that you need a VERY healthy appreciation for PB, if you hope to enjoy this dish as is. Remember, you can always modify the amounts to suit your own personal taste!

Looks pretty great, right?

If you're ready to make it, here's what you need:

  • 1 pre-cooked pizza crust, any variety
  • 1 and 3/4 TBS peanut butter
  • 1 and 1/2 TBS brewed black tea
  • 1 and 1/2 TBS rice vinegar
  • 1 TBS soy sauce
  • 1 TSP chili oil
  • 1 and 1/2 TSP ground ginger
  • 1 TSP honey
  • 1 LB boneless, skinless chicken (breast or thigh, your choice!), cooked and sliced into thin strips
  • 1 TBS toasted sesame seeds
  • 1 and 1/2 TSP paprika
  • 1 small red chile pepper, finely chopped
  • 1/2 TSP salt
  • 1/2 CUP grated mozzarella
  1. Preheat oven to 350 degrees F.
  2. To make the peanut sauce, combine peanut butter, tea, rice vinegar, and soy sauce.  Add the chili oil, ginger, and honey.  Mix until smooth.
  3. In a medium bowl, combine the chicken, sesame seeds, paprika, chile pepper, salt, and 1.5 TBS of the peanut sauce.
  4. Spread the remaining sauce over the pizza crust.  Top with the chicken and cheese.
  5. Bake at 350 degrees for about 15 minutes, or until the cheese is lightly browned.

I will admit, this was not my favorite dish.  For such a small amount of peanut butter, it sure packed a heavy punch! I'd double the spices if you like it hot, otherwise, it's got a nice slow burn.  :)

Bubble Pizza

We LOVE pizza!  Lately, we've been attempting to make our own every once in a while.  It saves money and, in all honesty, is probably better for us!  This recipe was super easy to make, and it's taste completely exceeded our expectations!


You will need:


Ground beef, pepperoni, pizza sauce, biscuit dough, onion, mozzarella cheese, and cheddar cheese

Preheat oven.
Grease a 9x13 baking dish.
Place ground beef in a large, deep skillet.  Cook over medium high heat until evenly brown.


Stir in pepperoni and cook until until browned.


Drain excess fat.  Stir in pizza sauce.


Remove from heat and set aside.
Cut biscuits into quarters.


Place biscuits in the bottom of the baking dish.


Spread meat mixture evenly over the biscuits.


Sprinkle with onion.


Bake for 20 minutes.
Sprinkle with mozzarella cheddar cheese.


Bake an addition 5 minutes.  Let stand 10 minutes before serving.


Recipe:
1 pound ground beef
.25 pound sliced pepperoni
1 14oz can pizza sauce (I used Bertoli Marinana)
1 16oz package refrigerated buttermilk biscuit dough
1 small onion, sliced and separated into rings
1.5 cups shredded mozzarella cheese
1 cup shredded cheddar cheese

Preheat oven to 400 degrees.  Grease a 9x13 inch baking dish.  Place ground beef in a large, deep skillet.  Cook over medium heat until evenly brown.  Stir in pepperoni, and cook until browned.  Drain excess fat.  Stir in pizza sauce.  Remove from heat and set aside.
Cut biscuits into quarters and place in the bottom of baking dish.  Spread meat mixture evenly over the biscuits.  Sprinkle top with onion.
Bake uncovered for 20-25 minutes.  Sprinkle top with mozzarella and cheddar cheese.  Bake an additional 5-10 minutes, until cheese is melted.  Let stand 10 minutes before serving.

Strength Modifier:
We divided it up into 6 pieces.  It was very filling!  (Of course, the hubby did go back for seconds!)
 
Intelligence Modifier:
 This was super easy!  20 minutes prep, tops, especially if you cut up the biscuits and/or onion while the beef cooks!
 
Wisdom Modifier:
While the ingredients were easy to find, it did take a trip to the grocery store to get everything!

Charisma Modifier:
 
This dish was delicious.  Not quite as perfect as our favorite pizza place, but still wonderful.  The hubby requested that it be added to the list of stuff to definitely make again....and I totally will!

Constitution Modifier:
 Definitely not among the most healthy dishes....but SOOOOO good!

Overall Score:
 This dish was wonderful!  I can't wait to make it again!
