Turkey Biscuit Turnovers

I've lost another pound on this diet!

Last night, I made another hearty, yet healthy, meal.  These were like tasty turkey meat pies.

Here's what you'll need!
  • 3 tbsp light cream cheese, softened
  • 2 tbsp fat free Cream of Mushroom soup
  • 2 tbsp evaporated skim milk
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 lb ground turkey, cooked and broken up
  • 1 tbsp minced onion
  • 1 can mini biscuits (6 ct)
  • 1 egg white, lightly beaten
  • 1 tbsp bread crumbs
  1. Preheat your oven to 350 degrees.  Lightly spray a cookie sheet with non-stick spray.
  2. In a medium bowl, mix the cream cheese, soup, milk, salt, and pepper until smooth.  Add the turkey and onion.  Mix well.
  3. Separate the dough into 6 biscuits.  Roll two biscuits together to form a ball. Use your hands or a rolling pin to press the dough into a 6" circle.  Repeat with the remaining biscuits.
  4. Spoon about 3/4 cup of the turkey mixture onto half of each biscuit circle.  Fold the other half of the biscuit over the filling to form a turnover.  Seal with the tines of a fork.
  5. Brush the tops with the egg white and sprinkle with bread crumbs.
  6. Transfer turnovers to the cookie sheet.  Bake for 20 to 25 minutes or until golden brown.

Peaches and Banana Cream Pie

So, this recipe is a little out of the ordinary.  It's got quite a few different flavors all mixed together, but they ended up complimenting each other quite well!  (Not to mention, our apartment smelled great for an evening!)

First, you will need:
Flour, salt, baking powder, banana pudding mix, butter, egg, milk, peaches, cream cheese, sugar, and cinnamon

Preheat over to 400 degrees.  Grease sides and bottom of a 9 inch pie pan.
In a medium mixing bowl, mix flour, salt, baking powder, and pudding mix.


Mix in butter, egg, and milk.


Beat for 2 minutes.
Pour mixture into pie pan.


Arrange the peach slices on top of the pudding mixture.


In a small mixing bowl, beat cream cheese until fluffy.


Add .5 cup suger and 3 tablespoons peach syrup.


Beat for 2 minutes.
Spoon mixture over peaches to within 1 inch of pan edge.


Mix together sugar and cinnamon.
Sprinkle over top.


Bake for 30 minutes.  Chill before serving.


Recipe:
 .75 cup all-purpose flour
.5 teaspoon salt
1 teaspoon baking powder
1 3oz package non-instant banana pudding mix
3 tablespoons butter, softened
1 egg
.5 cup milk
1 29oz can sliced peach, drained and syrup reserved
1 8oz package cream cheese, softened
.5 cup white sugar
1 tablespoon white sugar
1 teaspoon ground cinnamon

Preheat oven to 350 degrees F.  Grease sides and bottom of a 10 inch deep dish pie pan.
In a medium mixing bowl, mix together flour, salt, baking powder, and pudding mix.  Mix in butter, egg, and milk.  Beat for 2 minutes.  Pour mixture into pie pan.  Arrange the peach slices on top of the pudding mixture.
In a small mixing bowl, beat cream cheese until fluffy.  Add .5 cup sugar and 3 tablespoons reserved peach syrup.  Beat for 2 minutes.  Spoon mixture over peaches to within 1 inch of pan edge.  Mix together 1 tablespoon sugar and 1 teaspoon cinnamon and sprinkle over top.
Bake in preheated oven to 30-35 minutes, until golden brown.  Chill before serving.
