Stuffed Bell Peppers!

First of all, a new name has been chosen!  Details will be revealed this weekend when I get to work on graphics and a new food-rating system!  Hang tight!
Tonight, we had Stuffed Bell Peppers, and boy were they awesome.
First of all, the ingredients:
Green peppers, beef, rice, onion, tomato, garlic, salt, pepper, tomato soup, basil, and cheddar cheese!

Cut the tops off the peppers and remove the seeds.  In a large pot, cook the peppers in boiling water for 3 minutes.


Drain and immediately place in ice water.


Invert onto paper towels.


In a large bowl, combine the beef, rice, onion, tomato, garlic, salt, and pepper.


Place peppers in a greased baking dish and spoon the mixture into the peppers.


Combine soup and basil and spoon over the peppers.


Bake at 350 for 55 minutes.  Sprinkle with cheese and bake 5 more minutes.


Remove from oven and let cool for a few minutes before serving.

Recipe:

4 medium green peppers
1 pound lean ground beef
1 small onion, chopped
1 small tomato, seeded and chopped
1 cup cooked rice
1 garlic clove, minced
1 teaspoon salt
.25 teaspoon pepper
1 can tomato soup, undiluted
.5 teaspoon basil
.5 cup shredded cheddar cheese

2)  In a large bowl, combine the beef, rice, onion, tomato, garlic, salt, and pepper.  Spoon into peppers.  Place in a greased 9x9 baking dish.  Combine soup and basil; spoon over peppers.

3)  Bake at 350 degrees for 55-60 minutes or until the beef is no longer pink.  Sprinkle with cheese; bake 5 minutes longer or until the cheese is melted.


We loved this recipe!  The beef mixture could have used a little more seasoning - maybe another clove or two garlic.  But otherwise, it was perfect!
