Chocolate Chip Pancakes

Last night, we indulged in chocolate chip pancakes.  Whoa man, were they awesome.
Let's meet the ingredients:


Flour, sugar, baking powder, salt, eggs, milk, vegetable oil, and chocolate chips


First, in a bowl, combine the flour, sugar, baking powder, and salt.



Combine eggs, milk, and oil.



Add to the dry ingredients and mix well.


Stir in chocolate chips.


Pour the batter by .25 cupfuls onto a hot griddle.


Turn when bubbles form on top; cook until the other side is golden brown.
(The melty chocolate makes them a little extra dark.)


For the totally awesome cinnamon syrup, you'll need:

Cinnamon, honey, and butter


Combine the syrup ingredients in a microwave-safe bowl.


Microwave uncovered on high about 3 minutes, stirring occasionally.


(This recipe makes about a dozen of these babies.)


Drizzle syrup over pancakes and enjoy!


Recipe:

Pancakes:
2 cups all-purpose flour
.25 cup sugar
2 tablespoons baking powder
1 teaspoon salt
2 eggs
1.5 cups milk
.25 cup vegetable oil
.5 cup chocolate chips

Cinnamon Honey Syrup:
1 cup honey
.5 cup butter
1 teaspoon ground cinnamon


1)  In a bowl, combine the flour, sugar, baking powder, and salt.  Combine eggs, milk and oil; add to dry ingredients and mix well.  Stir in chocolate chips.  Pour the batter by .25 cupfuls onto a hot griddle.  Turn when bubbles form on top; cook until second ide is gold brown.  Keep warm.

2)  Combine the syrup ingredients in a microwave-safe bowl.  Microwave, uncovered, on high until butter is melted and syrup is hot, stirring occasionally.  Serve with pancakes.


My husband and I really enjoyed this recipe.  I actually didn't care for the syrup at all, but he loved it, and we both gobbled up probably more pancakes than we should have!  It was super fast and easy to makes - would be ideal for a weekend morning treat.
