First of all, for only 280 calories and 5 grams of fat, you can't go wrong.
The rice wasn't dry and was full of flavor. The sauce for the enchilada was a bit tangy, but that's to be expected with most sour cream sauces. The enchilada itself was a little dry, but it had just the right amount of spiciness to threaten heart-burn but not come through with it.
I've always been a fan of Stouffer's products and now that I'm officially dieting to get rid of the weight than came with carrying a child for 9 months, Lean Cuisine hits the spot.
While it doesn't quite come out looking like it did on the packaging...it tasted pretty good.

I would be willing to buy this variety of Lean Cuisine again, if other, more preferred varieties were unavailable.
