Spinach Enchiladas Verde

We LOVE Mexican food in our house!  This recipe was insanely easy to make and super delicious!


First, you'll need:


Mayo, sour cream, green salsa, spinach, Monterrey Jack cheese, corn tortillas

Preheat your oven to 350 degrees.
In a small bowl, mix your mayo, sour cream, and green salsa.


Spread enough to coat the bottom of a baking dish.
In each tortilla, spread a small amount of the salsa mixture down the center.
Put a small handful of spinach over it, then top with cheese.
Roll up and place in the baking dish.


When the dish is full, pour the remaining sauce over the top and sprinkle with remaining cheese.
Bake for 20 minutes and then enjoy!
Recipe:
.75 cup sour cream
.25 cup mayo
1 7oz can green salsa
1 can spinach
2 cups shredded Monterrey Jack cheese
6-10 corn tortillas
Preheat oven to 350 degrees.
In a small bowl, stir together the mayo, sour cream, and green salsa.  Spread enough to coat the bottom of a greased 9x13 baking dish.  On each tortilla, spread a small amount of the sauce down the center.  Lay a small handful of spinach over it and then sprinkle with Monterrey Jack cheese.  Roll up.  Place in the baking dish.  When all of the tortillas are in the pan, pour the remaining sauce over the top and sprinkle with the remaining cheese.
Bake for 20-25 minutes in the preheated oven.

It takes of few of these to fill you up, but they're reasonably healthy so you can indulge!

 These were SO easy it took practically no thought to put them together!

We pretty much keep all these things on hand, and I expect most other people do, too!

 For as easy as these were to put together, the taste can't be beat!  They were wonderful!

Constitution Modifier:
 These enchiladas were stuffed full of delicious, iron-rich spinach!  I felt no shame in devouring a couple!

 Almost perfect!!
